What you need

  • Kale
  • 1 purple onion, sliced so thin it's almost clear
  • 2 lemons, juiced
  • 1/4 cup ricotta
  • Olive oil
  • Salt + pepper

What to do

  • Place kale into a large bowl.
  • Glug a healthy amount of olive oil & massage well. Let it soak for 20 minutes.
  • Place thinly sliced onion into the salad bowl, followed by the ricotta. Mix well.
  • Add the lemon juice, salt, & pepper (to taste). Mix.
  • Taste your salad and adjust accordingly. I usually have to add more lemon.
