Goat cheese, mushroom, & basil chicken (Baked)

This is an original recipe that I created using ingredients that are always found in my refrigerator. Surprisingly, it turned out delicious and juicy, which is always a concern when baking chicken. Would love for you to try it!

What you need:

  • Chicken breast, butterflied
  • Fresh basil leaves
  • Goat cheese
  • 1/2 cup Mushrooms, chopped
  • 3 tblspns Balsamic vinegar
  • 1 tblspn Chicken broth
  • 2 tblspns Olive oil

What to do:

  1. Preheat oven to 350
  2. Coat a glass baking tray with olive oil and lay chicken flat
  3. Layer basil on each piece of chicken covering it completely
  4. Top basil with goat cheese using a desired amount
  5. Cover chicken with mushrooms, adding a few extra for flavor
  6. Drizzle chicken broth over chicken evenly
  7. Pour balsamic evenly, making sure to cover the entire area of the tray
  8. Bake for 20 minutes, turn off oven and leave tray in for another 2 minutes & serve immediately

Bye Bye Shabby Chic

I went through a serious phase where I thought I would decorate every home I lived in in Shabby Chic. The phase was so serious that I not only refused to call it a phase, but it lasted from my first boyfriend to my current one, who finally put an end to it. While it was heartbreaking to part with all my hand painted then distressed white furniture, floral print pillows, and crystal chandeliers, I am much happier living in a contemporary style that suits both our lifestyles. Shabby Chic is lovely and will forever catch my eye, but I like to think of that chapter as closed. Rachel Ashwell created a real brand that I will always admire, but that is where I will leave it. Oh, and lets not forget how irritating it is to constantly have loads of slip covers to bleach since white shows everything! So, why not post some pics to hallmark my big girl home decor transition! RIP Shabby Chic…you will be missed (kind of).
